I have used this recipe for a long time, it always turns out great and everyone who has tasted has loved it ☺ its simple to make and tastes really good, so here’s the recipe.
1 ½ cup all-purpose flour
3 ripe bananas mashed
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon ground cinnamon
½ teaspoon salt
½ cup sugar
1/3 cup cooking oil or melted butter
In a bowl Mash the banana with a fork or you can puree in a blender if you want a smooth consistency
Whisk the oil and sugar. Then add the egg and banana puree to the mixture and whisk together
In a different bowl mix the flour and baking powder,baking soda,cinammon
Fold the flour mixture into the banana mixture .N. B don’t over mix or whisk , the batter will be dense i.e it will be wet, look undone yet it’s fully baked or done. if using hand mixer, use the lowest speed)
Coat your muffin tin with some oil and sprinkle some flour and shake off the excess flour, this is to avoid it from sticking on the muffin tin or you can line with muffin cups.
Scoop the batter into the prepared muffin tin.
Preheat the oven to 160 C and bake for 25 -30minutes. Don’t open the oven door until 25 minutes are over to ensure the temperature is not disrupted.
Suggestions. To make it more healthy you can use:
Substitute sugar with honey
Add some grated carrots
