Lunch – Tasty baked vegetables.

This is one of my favourite lunch meals simply because it’s fast, easy, delicious and healthy . Whenever I don’t have a lot of time to prepare a meal for lunch this always works out well for me.


Butternut squash



Coloured peppers

Red onion

Crushed garlic

Oil (preferably heart friendly)

Salt and pepper


Preheat oven to 200°C

Chop everything and put them on a lined baking tray .


Add crushed garlic, 2 tablespoons of oil , sprinkle some salt and pepper to taste , give it a good mix.

Bake in the preheated oven , On the medium oven rack for 10 -15 minutes .


Serve and enjoy 😋
